The Provenance

Grown under shade in Kagoshima

Our matcha comes from Kagoshima, in the far south of Japan, where volcanic soil, early southern sun, and clean mountain air produce nearly all of the country's certified-organic tea. For three weeks before harvest the gardens are draped in shade; starved of sun, the leaves flood with chlorophyll and amino acids, the source of matcha's jewel-green color and its rounded, savory sweetness.

Only the tender top leaves are picked, deveined, and slowly turned to powder between granite millstones. A single stone yields barely 40 grams an hour. Blending across cultivars and harvests is deliberate: it's how every bag tastes as smooth and consistent as the last. We finish it with natural vanilla flavor for a cup that's approachable enough for your first bowl, and nuanced enough for your thousandth.

Real stone-ground matcha is the whole tea leaf, not a soluble extract, so it won't melt away like sugar. Whisk, shake, or froth it and the fine powder stays suspended in your cup. That's the point: you're drinking the whole leaf, not a strained infusion. If a little settles while you sip, it isn't a flaw. Just swirl or shake and it comes right back.
